This we all know: Travel changes people. If nothing else, it broadens their horizons, and introduces them to new cultures, languages and ideas. Better yet, it helps them to see the world through other people's eyes, fundamentally alters the way they engage with… well, with everything, including themselves.

In anticipation of the New York Travel Festival (#NYTF), a group of leading scholars, sustainability advocates and travel-adventure planners/guides/specialists is coming together for a Google+ Hangout on Air to discuss and explore the kind of travel that transforms.

Some of the topics likely to be tackled:

* the "eco-cultural" mindset: how the desire for social responsibility, ecological sustainability, cultural preservation and experiential authenticity is changing they way people think about travel. 

* what leads to transformation: the role of intention, self-awareness and social consciousness through cultural immersion that leads to transformation.

* the conditions for transformative travel: how to move toward designing and planning a life-changing adventure that can have a positive impact on the world.

Chef Jean Luc Kieffer

Jean Luc Kieffer was born in the small Alsatian village of Reichstett, not far from Strasbourg and the German border. His father owned a butcher shop, where sausages, pates and specialty meats were regularly made and sold to Strasbourg’s leading restaurants. Like most classically trained French chefs, Jean Luc began his apprenticeship at age 14, starting at the famed Maison des Tanneurs in Strasbourg. He worked at many Michelin-starred restaurants in France and Western Europe until his fascination with the great cuisines of the world led him to travel abroad and explore a wide range of flavorings not found in traditional French cooking.

After several years on cruise ships, he became chef for the Horizon Hotel on the Isle of Jersey, where he often cooked for Queen Elizabeth II, a frequent guest. He was executive sous chef at the Caribe Hilton and executive chef at La Cava in Puerto Rico. In the nineteen eighties, Jean Luc came to New York, where for three years he was executive sous chef for Windows on the World and taught at the Culinary Institute of America. As executive chef of Pondicherry, one of New York’s first Indian fusion restaurants, he created many new dishes in collaboration with noted film producer and cook book author Ismail Merchant. Subsequently he worked with Jean Georges Vongerichten at both Vong and Jean Georges and then became executive chef of Park Bistro, where he made numerous appearances on the The Food Channel.

With the opening of PicNic Market and Café on the Upper West Side nearly a decade ago, Jean Luc returned to his Alsatian roots.  In 2013, with the launch of Customs Catering, the Chef’s culinary wanderlust will fulfill a surprisingly unmet need in New York City’s multi-cultural landscape.  For more information, contact customscatering@gmail.com or call 212-222-6680.

Vacationers and event organizers have a lot of discretion where to spend their travel dollars. If a location is seen inhospitable, they are happy to quickly walk away and plan a trip elsewhere. Arizona recently faced the potential to lose travelers after the legislature there passed a law allowing businesses to discriminate against gays. The CEOs of major airlines and hotels quickly pressed the governor for veto, which she did. Arizona saw a large drop off in 2010 when it enacted a tough law targeting illegal immigrants that many saw as allowing racial profiling. Conventions and corporate retreats were canceled or rescheduled as a result. Finally, there was the lingering effects of a posh AIG retreat that drew strong criticism at the height of the recession and a ripple effect of companies scaling back their own retreats as a result.

Why the Travel Industry Shouldn’t Fear Journalism

Two key thoughts underpin this panel: First, a great deal of travel content, whether from destinations or publications, is crap. It is poor quality, painfully shallow, or relentlessly, distressingly positive. Worse yet, some of it is all of the above. It seems to speak to a fear that people don't really care about where they're going as long as — and only if — the sand is perfectly sugary and the water is ideally azure. 

Second, what we, the people who tell and read stories for a living, know is the value of journalism and other forms of well-researched and responsibly reported quality content. With its warts-and-all, gripping narratives, it offers something better than the bland promises of top 10 lists and perfection: credibility. Any good tale needs a challenge, an antagonist, some grit. Consumers are tuning out, but destinations — and publications — can grab them again with real stories, real people, real amazement at what a rich, enchanting, challenging and sometimes grim world this is to explore.

Learning AFAR, the Importance of Travel in Your Youth

In the summer of 2011, Deisy Cedeno was granted a full scholarship from Learning AFAR to study the Amazon Rainforest in Peru. Now a senior at Essex Street Academy in Manhattan, this Learning AFAR alumna shares insights on why travel during high school was pivotal for her vision of her future and understanding of her place within our world.

Learning AFAR, the flagship program of the AFAR Foundation, provides experiential travel scholarships to youth who would not otherwise have the opportunity to explore our world. Students spend six months studying culture, global issues, service and leadership before embarking on a international expedition. Since 2010, the program has supported 271 students. They return with confidence and a sense of personal ownership that shifts their perceptions and helps empower their communities.

Gomes was born in Dehiwala, Sri Lanka. She was a child star, traveling with her mom and performing in many countries. As she got older, she danced and acted in movies and plays, and is still a much-loved Sri Lankan actress.

Toriello has been cooking since he could pull up a stool to help his mom in the kitchen. He was the chef at St. Vincent’s Hospital, cooking for patients, staff and visitors. He started his own catering business and also works for Trends Restaurant as sous chef.

The couple, who have started their own company, are also involved in SINFI and City Harvest. They enjoy showing couples how enjoyable it is to cook together.
